Bikini Recipe

Makes enough for 10 servings

To make the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Cocktail (produces 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Syrup: Combine the listed components inside a pan, heat until it reaches a simmer, stirring until the sugar dissolves. Then, take off the burner allowing it to cool entirely. Decant into an sealable bottle, close it and store in the refrigerator, it can be stored for up to a month.

For the Premix: Mix all the liquid ingredients into a sizeable container, allow it to infuse for one hour, then filter it best through cheesecloth, to ensure it's perfectly clear.

To serve: Pour 85ml of your premix into your cocktail shaker filled with ice, gently stirring gently for about 60 seconds to chill. Strain to a frosted cocktail glass or a similar vessel, garnish with some cranberries and complete it using a light spray with the mandarin essence above the glass.
